What each ingredient does

Tapioca
Forms the jelly structure as its starch swells and thickens when heated with liquid.
Sugar
Adds sweetness and helps give the jelly its flavour balance.
Lemon juice
Adds acidity that brightens the sweetness of the jelly.
Sherry
Adds aroma and flavour to the finished jelly.

The step that matters

Boiling the soaked tapioca. Tapioca must be heated until it boils and cooks through, because the starch granules only swell and turn clear and thick once fully heated. Stirring keeps it from sticking and scorching on the base of the pan.
