Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Lemon juice
Adds sharp acidity that balances the sugar and gives the jelly its flavour.
Loaf sugar
Sweetens the jelly and adds body to the syrup.
Egg whites and shells
Bind impurities and cloud particles to the surface so they can be strained out, clearing the jelly.

The step that matters

Stop whisking and boil for 5 minutes. Whisking must stop once the liquid boils, because agitation can break up the egg white raft that traps impurities. Steady boiling then lets the egg coagulate and clarify the liquid before straining.
