Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to a stiff froth, they add airy lightness and a smooth, fluffy texture to the frozen ice.
Sugar
Dissolved into the water to make a syrup that sweetens the ice and keeps it from freezing rock hard.
Lemon juice
Provides the sharp acidity and bright lemon flavor that defines the dish.
Lemon rind
Simmered in the syrup to infuse its aromatic oils and lemon flavor.

The step that matters

Gradually mix in the cold syrup as lightly as possible. Egg whites hold air only while whipped. Folding gently and gradually keeps that foam from collapsing, so the frozen ice stays light instead of dense.

Swap the lemon
