Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Layer the ingredients

  1. Slice the meat and place one or two slices at the bottom of an earthenware jar or pan.

  2. Add the sliced onions on top of the meat, then layer more meat.

  3. Add the sliced carrots.

  4. Add the soaked peas.

Cook

  1. Pour in the gallon of water.

  2. Cover the jar.

  3. Place the jar in a hot oven at 400°F (200°C) for 3 to 4 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat
Supplies savory flavor, and slow cooking in liquid turns it tender.
Onions
Release sweetness and aroma as they soften during the long, gentle cooking.
Carrots
Add natural sweetness and color to the broth as they cook.
Whole peas
Soften over long cooking and give the soup body and substance.
Rice
Absorbs liquid and releases starch, thickening the soup slightly.

The step that matters

Cover the jar before the long bake. Covering traps steam so the water cannot evaporate away over 3 to 4 hours. This keeps the liquid level steady and lets the meat and peas cook gently in moist heat, which keeps them tender rather than dry.

Swap the peas

How well each one fits the dish's main ingredients (meat, onion, carrot, rice, pepper):

  1. Beansfits better
  2. Sesamefits better
  3. Black-eyed peafits better
  4. Peasthe original

Fit is the average pairing score against meat, onion, carrot, rice, pepper. Candidates are from the same food group and used in at least 100 recipes.
