What each ingredient does

Onions
Form the bulk of the sauce, giving body and a mild sweetness once cooked and sieved.
Butter
Adds richness and a smooth, silky mouthfeel to the sauce.

The step that matters

Boil the onions until tender and change the water if they are strong. Onions left too pungent carry sharp, sulphurous flavour into the sauce, and fully softened onions are needed to rub through a sieve into a smooth purée.
