Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavour and tender pieces that stay soft within the set custard.
Eggs
Set the mixture into a firm, sliceable custard when gently steamed.
Flour
Thickens the butter and milk into a smooth sauce that holds the oysters in place.
Butter
Enriches the flour base and adds richness to the finished darioles.
Milk
Forms the liquid base that the flour thickens and the eggs set.

The step that matters

Steam gently for 20 minutes. Eggs set through protein coagulation, and high heat or boiling makes the custard curdle and turn rubbery or porous. Gentle steam keeps the texture smooth and even.
