Rhubarb Tart

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Make a puff pastry and line the edges of a deep pie dish with it.

  3. Wash, wipe, and cut the rhubarb into 1‑inch pieces; if tough, peel off the skin.

Assemble

  1. Pile the rhubarb high in the dish, as it will shrink while cooking.

  2. Add the sugar on top of the rhubarb and cover with the pastry crust.

  3. Decorate the edges of the crust and bake for 30 to 45 minutes.

  4. Optionally, add a small amount of lemon juice and minced lemon peel for flavor.

Finish and serve

  1. Brush the tart with beaten egg white and sprinkle with sifted sugar near the end of baking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Forms the crisp, flaky crust that encloses the fruit and sugar.
Rhubarb
Provides the tart fruit filling that cooks down and softens in the oven.
Moist sugar
Sweetens the rhubarb and helps draw out its juices as it bakes.
Egg white
Brushed on the crust to add shine and help it brown.

The step that matters

Piling the rhubarb high. Rhubarb shrinks and releases liquid as it cooks. Piling it high leaves room for the filling to settle without leaving a gap under the crust or spilling over the dish.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (rhubarb, sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Figfits about as well

Fit is the average pairing score against rhubarb, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
