Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pastry

  1. Roll out the puff pastry thinly and cut into strips about 3 inches wide.

  2. Fold the strips around small roll tins and fasten the join with beaten egg.

  3. Place the joined side down on a baking tin and bake at 400°F (200°C) for 7 minutes.

Make the filling

  1. Chop the sweetbreads, ham, and mushrooms finely.

  2. Melt the butter in a pan, add the flour, and stir in the stock gradually, cooking for 2-3 minutes.

  3. Add the cream, seasonings, and meat mixture, and heat until hot.

Fill and serve

  1. Remove the pastry cases from the tins and fill them with the mixture.

  2. Garnish the ends with mashed potato passed through a piping bag.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Bakes into flaky, layered cases that hold the filling.
Butter
Adds richness and flavour and forms the base of the roux.
Flour
Thickens the stock with butter into a smooth, binding sauce.
White stock
Supplies liquid that turns the roux into a moistening sauce for the filling.
Sweetbreads
Provide the tender, delicate meat that forms the main filling.
Cream
Adds richness and smoothness to the sauce.

The step that matters

Stir the stock into the roux gradually. Adding the liquid slowly while stirring lets the starch in the flour disperse evenly and swell, which prevents lumps and gives a smooth, thick sauce.

Swap the mace

How well each one fits the dish's main ingredients (ham, mushroom, butter, flour, cream, pepper, potato):

  1. Thymefits better
