Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the onions

  1. Peel the onions and boil them until tender.

  2. Cut off a slice from the top of each onion to create a lid.

  3. Remove the center of each onion.

Fill and bake

  1. Place a kidney and a small piece of butter inside each onion half.

  2. Season with salt and pepper, then replace the lid.

  3. Dredge the onions with flour.

  4. Place in a baking dish and bake at 400°F (200°C) for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spanish onions
Form the edible shell that holds the filling and turns sweet as it cooks.
Kidneys
Make up the savory, meaty filling that cooks inside each onion.
Butter
Adds fat and richness, moistening the filling as it bakes.
Flour
Dusts the outside so the onions brown lightly in the oven.

The step that matters

Remove the center of each onion carefully. Boiled onions soften and tear easily. Keeping the shell intact and its walls even gives the filling a sturdy container and stops it from leaking during baking.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper, flour):

  1. Shallotfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against butter, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
