Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Eggs
Add structure and richness as they set during baking, binding the cake together.
Flour
Forms the main structure of the cake once baked.
Baking powder
Releases gas in the batter, helping the cake rise in the oven.
Sugar
Sweetens the cake and helps create a light texture when creamed with butter.
Sultana raisins
Add chewy sweetness and moisture in pockets throughout the cake.

The step that matters

Bake for the full time at a steady temperature. A dense fruit cake needs enough time for the centre to set fully. Opening the oven or baking too hot can cause the outside to over-brown before the middle is cooked through.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, raisin, egg, butter, flour, almond):

  1. Vanillafits better
  2. Figfits better
  3. Coconutfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, raisin, egg, butter, flour, almond. Candidates are from the same food group and used in at least 100 recipes.
