Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornflour
Thickens the liquid so the mould holds its shape when set.
Egg yolks
Add richness and help the mixture thicken as it cooks.
Loaf sugar
Adds sweetness and balances the sharpness of the citrus juice.
Oranges
Rind and juice give the mould its aroma and fruity flavour.
Lemon
Adds acidity and bright citrus flavour.

The step that matters

Cooking after the egg yolks are added. Egg yolks thicken at gentle heat but can curdle or scramble if the mixture boils hard. Keep the heat low and stir steadily so the custard stays smooth and sets evenly.

Swap the orange

How well each one fits the dish's main ingredients (lemon, egg, sugar):

  1. Orangethe original
  2. Vanillafits about as well
  3. Limefits less well
  4. Raisinfits less well

Fit is the average pairing score against lemon, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
