Why it works: Cream and sugar are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Orange or Lemon Cream
Ingredients
Directions
Prepare the flavouring
Rub the sugar onto the rind of the lemons or oranges.
In a pan, combine gelatine, cold water, and sugar; stir until dissolved.
Add the strained juice of the lemons or oranges and let the mixture cool.
Whip and set
Whisk the cream until stiff, then add the cooled gelatine mixture (before it sets).
Stir until it begins to set, then pour into a mould rinsed in cold water.
Once set, dip the mould in warm water and turn out.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the mixture into a firm, sliceable body as it cools.
- Cream
- Whipped to stiff peaks, it gives the dessert an airy, light texture.
- Sugar
- Sweetens the dish and balances the sharpness of the citrus.
- Lemons or oranges
- Juice adds acidity, and the rind oils add fragrant citrus aroma.
The step that matters
Adding the gelatine mixture at the right moment. Gelatine sets as it cools. Add it while still fluid enough to fold evenly into the whipped cream. Added after it firms, it leaves lumps; added too cold, it can make the cream lose its air.
