What each ingredient does

Apricots
Provide the fruit pulp that gives the cream its main flavour and colour.
Sugar
Adds sweetness and balances the tartness of the apricots.
Cream
Whipped to hold air, giving the dessert a light, creamy texture.
Gelatine
Sets the mixture as it cools, so the cream holds its shape when unmoulded.

The step that matters

Stir in the fruit pulp when it starts to set. Gelatine sets as it cools. If the mixture is still runny, the pulp sinks and the dessert separates; if it is already firm, the pulp will not blend evenly.

Swap the apricot

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Apricotthe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
