Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Marrow
Forms the bulk of the jam and softens into a tender, spreadable body as it cooks.
Sugar
Sweetens the jam and helps it thicken and set as the mixture boils.
Lemons
Add acidity and pectin from the juice and rind, helping the jam set and balancing sweetness.
Root ginger
Adds a warm, aromatic flavour that infuses the jam during simmering.

The step that matters

Boiling until the jam sets. Sugar and acid only gel properly once enough water has evaporated and the mixture reaches the setting point. Stopping too early leaves runny jam, while boiling too long can make it stiff and dull in flavour.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, lemon, pepper):

  1. Cardamomfits better
  2. Marjoramfits better
  3. Parsleyfits better
  4. Gingerthe original

Fit is the average pairing score against sugar, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes.
