Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb the milk and eggs to give the pudding its body.
Suet
Adds richness and a tender, moist texture as it melts during steaming.
Eggs
Bind the mixture and help it set as it steams.
Milk
Moistens the crumbs and makes the batter soft enough to soften and cook through.
Apples
Add moisture and a fruity flavour that brightens the rich suet.
Moist sugar
Adds sweetness and a caramel note from its molasses.

The step that matters

Let the mixture stand before steaming. Standing for an hour lets the bread crumbs fully soak up the liquid, so the batter thickens evenly and the pudding steams to a uniform texture rather than a dense or patchy one.
