Apricot Bouchees

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the cases

  1. Roll out the puff pastry to less than 1 inch thick.

  2. Use a hot, wet cutter to stamp out rounds about 2 inches in diameter.

  3. Make a deep circular indentation with a smaller cutter.

  4. Bake in a 400°F (200°C) oven for 12 minutes.

  5. Once cool, scoop out the paste within the ring.

Fill and serve

  1. Drain the apricots from the syrup.

  2. Place half an apricot, rounded side down, in each case.

  3. Fill the hollow with stiffly whipped sweetened cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Rises and flakes in the oven to form the crisp, layered case.
Preserved apricots
Provide fruit flavour and a soft, sweet, slightly tart centre.
Whipped cream
Adds a light, rich filling that holds its shape when stiffly whipped.
Castor sugar
Sweetens the whipped cream and helps it hold its structure.

The step that matters

Use a hot, wet cutter. Puff pastry layers separate only when the dough stays cold and cuts cleanly; a hot, wet cutter seals the edges so the rounds rise evenly instead of squashing or sticking.

Swap the apricot

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Apricotthe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
