What each ingredient does

Sponge cake
Absorbs the syrup and forms the soft, moist base of the trifle.
Apricots
Provide the fruit flavor and sweetness at the top of each piece.
Heavy cream
Adds richness and a light, airy texture when whipped.
Granulated sugar
Sweetens the syrup and helps it thicken slightly as it boils.
Lemon juice
Adds acidity that brightens the sweetness of the syrup and apricots.

The step that matters

Boil the syrup and sugar together for 1 hour. A long, gentle boil concentrates the syrup so it soaks into the cake without making it watery. Too little reduction leaves the trifle soggy.
