Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Forms the sweet base that cooks down into a clear, hard candy when cooled.
Lemon juice
Adds acidity that helps keep the sugar from crystallizing.
Cream of tartar
Acts as an acid that helps prevent sugar crystals from forming in the syrup.

The step that matters

Cooking to the soft ball stage. Sugar syrup must reach the correct temperature to set into the intended texture. Undercooking leaves it sticky and soft, while overcooking makes it brittle or scorched.

Swap the saffron

How well each one fits the dish's main ingredients (sugar, lemon, cream):

  1. Nutmegfits better
  2. Cinnamonfits about as well
  3. Peppermintfits about as well
  4. Saffronthe original

Fit is the average pairing score against sugar, lemon, cream. Candidates are from the same food group and used in at least 100 recipes.
