What each ingredient does

Eggs
Set the custard so the pudding holds its shape when steamed.
Bread
Forms the structure that soaks up the custard and holds the pudding together.
Milk
Forms the liquid custard that moistens the bread and sets with the eggs.
Sugar
Adds sweetness and helps dissolve evenly into the milk and eggs.
Raisins
Add pockets of sweetness and chew throughout the pudding.

The step that matters

Pour the custard over the bread, cover with greased paper, and steam gently for 1 hour.. Gentle steam heats the egg custard slowly so it sets into a smooth, tender pudding. High heat would make the eggs curdle and turn the texture grainy or rubbery.

Swap the almond

How well each one fits the dish's main ingredients (bread, milk, egg, sugar, raisin):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Pecansfits less well
  4. Cocoafits less well

Fit is the average pairing score against bread, milk, egg, sugar, raisin. Candidates are from the same food group and used in at least 100 recipes.
