Directions

Prepare the carrots

  1. Wash and scrape the carrots.

  2. Cut each carrot into 3 or 4 pieces.

  3. Place the carrots in a pot with just enough water to cover them.

  5. Drain the carrots well.

  6. Pass the drained carrots through a fine sieve to obtain the pulp.

Make the jam

  1. Weigh the pulp and return it to the pot with an equal weight of sugar.

  2. Bring the mixture slowly to a boil.

  3. Cook for 5 minutes, stirring and skimming frequently.

  4. Once cool, stir in the chopped almonds, brandy, lemon juice, and lemon rind.

Jar and store

  1. Transfer the jam into small jars.

  2. Cover the jars tightly.

  3. Store the jars in a cool, dry place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Provide the bulk and body of the jam once cooked and sieved into pulp.
Preserving sugar
Sweetens the jam and helps it set and keep by binding water.
Lemon juice
Adds acidity that brightens flavour and supports setting.
Bitter almonds
Add a nutty, bitter aroma that complements the sweet carrot.
Brandy
Adds aromatic flavour and depth to the finished jam.

The step that matters

Cook for 5 minutes, stirring and skimming frequently. Sugar and pulp must be boiled hard enough to concentrate and thicken the jam, while stirring prevents scorching on the bottom of the pot. Skimming removes foam so the jam stays clear and fresh-tasting.

Swap the carrot

How well each one fits the dish's main ingredients (sugar, lemon, almond, brandy):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Shallotfits better
  4. Carrotthe original

Fit is the average pairing score against sugar, lemon, almond, brandy. Candidates are from the same food group and used in at least 100 recipes.
