Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the crust

  1. Preheat the oven to 400°F (200°C).

  2. Line 10 to 12 patty pans with short paste crust.

  3. Fill the pans with short paste crust and cover with buttered paper.

  4. Bake until the crust is crisp.

Fill and serve

  1. Once cool, fill each tartlet halfway with apricot jam.

  2. Whip the cream with castor sugar until stiff and pile it on top of the jam.

  3. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Short paste crust
Forms the crisp, sturdy shell that holds the jam and cream.
Apricot jam
Adds sweetness and fruity flavour, and moistens the base beneath the cream.
Cream
Whipped to stiff peaks, it forms a light, airy topping.
Castor sugar
Sweetens the cream and helps it whip to a stable, stiff texture.

The step that matters

Whip the cream until stiff. Cream under-whipped stays runny and soaks into the jam, while over-whipped cream turns grainy and can separate. Stopping at stiff peaks keeps the topping firm and smooth.

Swap the apricot
