What each ingredient does

Egg white
Whipped to stiff foam, it lightens the frozen mixture and gives it a smoother, airier texture.
Cream
Its fat content adds richness and a smooth, creamy mouthfeel to the ice.
Sugar
Sweetens the base and keeps the ice softer by lowering its freezing point.
Fruit pulp
Provides the main flavour and acidity, and most of the colour of the ice.
Milk
Adds body and dairy flavour, diluting the fruit into a creamy base.

The step that matters

Partially freeze before folding in the egg white. If the mixture is fully frozen, the cold, firm base cannot absorb the whipped egg white evenly, so it stays streaky and loses its light texture. Partial freezing leaves it slushy enough to fold in smoothly.
