What each ingredient does

Eggs
Yolks enrich and bind the pudding, while whisked whites add lightness when folded in.
Breadcrumbs
Form the body of the pudding, soaking up the liquid to create a soft, tender crumb.
Honey
Adds sweetness and moisture, and helps the pudding stay soft and tender.
Florador
Cooked in milk to thicken the liquid, giving the pudding a smooth, set structure.
Butter
Adds richness and fat, contributing flavour and a tender texture.

The step that matters

Folding in the egg whites. Stiffly whisked whites trap air that gives the pudding its lightness. Folding gently keeps that air in; vigorous stirring deflates the foam and leaves a dense result.

Swap the ginger

How well each one fits the dish's main ingredients (honey, butter, egg, lemon, milk):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Thymefits about as well
  4. Gingerthe original

Fit is the average pairing score against honey, butter, egg, lemon, milk. Candidates are from the same food group and used in at least 100 recipes.
