What each ingredient does

Patent isinglass
Gelatinous protein that sets the liquid into a firm jelly when chilled.
Egg whites
Whipped foam traps impurities so the jelly can be clarified to a clear finish.
Sugar
Adds sweetness and body to the jelly.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
Sherry
Adds aroma and a wine flavour to the jelly.

The step that matters

Whisk the egg whites until stiff and fold them in. Stiff whites with crushed shells collect cloudy particles as the mixture is heated and then drained, so the jelly clears. Underwhipped whites or deflating them during folding leaves the jelly cloudy.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg, sherry):

  1. Vanillafits better
  2. Figfits better
  3. Pineapplefits better

Fit is the average pairing score against sugar, egg, sherry. Candidates are from the same food group and used in at least 100 recipes.
