What each ingredient does

Custard
Forms the rich, creamy base that gives the ice cream its body.
Sugar
Sweetens the mixture and softens the frozen texture so it stays smooth.
Lemons
Provide bright acidity and aroma from the juice and the oils in the rind.

The step that matters

When cool, stir the mixture into the custard. Adding warm sugar syrup to custard can thin it or cause it to curdle. Letting the mixture cool first keeps the custard smooth and helps the ice cream freeze to a fine, even texture.

Swap the saffron

The recipe marks saffron as optional. How well each one fits the dish's main ingredients (sugar, lemon):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits about as well
  4. Saffronthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
