Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the mixture

  1. Cream the sugar and egg yolks together until thick and white.

  2. Add the juice and grated rinds of the lemons, cream or milk, and cake crumbs.

  3. Fold in the stiffly whisked egg whites.

  4. Line a pie dish with short crust pastry and pour in the mixture.

Bake and serve

  1. Bake for about 1 hour, or until set.

  2. Sprinkle the surface liberally with caster sugar and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the base and whites, whisked stiff, lighten the pudding as it sets.
Cake crumbs
Absorb the liquid and give the pudding body as it bakes.
Lemons
Juice and rind give the pudding its sharp, fragrant lemon flavour.
Castor sugar
Sweetens the custard base and browns lightly on the surface.
Cream or milk
Adds moisture and richness so the mixture stays soft and creamy.

The step that matters

Fold in the stiffly whisked egg whites. Folding gently keeps the air in the whites, which is what lifts the mixture. Stirring hard knocks the air out and leaves a dense, flat pudding.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg, cream):

  1. Vanillafits better
  2. Raisinfits better
  3. Strawberryfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
