  4. Cover and simmer gently for 1 hour, stirring occasionally.

Add the lobster and serve

  1. Remove the lobster flesh and cut it into 1‑inch square pieces.

What each ingredient does

Lobster
Provides the main protein and sweet, delicate seafood flavour that the curry is built around.
Butter
Carries the curry spices and adds richness and a smooth mouthfeel to the sauce.
Onion
Softens and sweetens as it fries, forming the aromatic body of the sauce.
Flour
Thickens the sauce slightly so it coats the lobster rather than running thin.
Curry powder
Supplies the warm, aromatic spice character that defines the dish.
Milk
Adds creaminess and softens the heat of the spices, giving a rounder sauce.

The step that matters

Adding the lobster off the heat. Lobster meat turns tough and rubbery when overcooked. Adding it just before boiling and letting it sit off the heat gently warms it through while keeping it tender.
