Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster
Provides the main filling and its savoury, sweet flavour.
Egg yolk
Binds the lobster filling so it holds together when heated.
White sauce
Adds moisture and creaminess to the filling, keeping it from drying out.
Puff pastry trimmings
Forms the crisp, flaky outer casing that browns during frying.

The step that matters

Let the filling cool before shaping. A hot filling softens the pastry and makes the edges hard to seal. It can also melt fat and steam, causing the rissoles to burst or open in the hot fat.

Swap the parsley

How well each one fits the dish's main ingredients (lobster, egg, sauce, pepper):

  1. Tarragonfits about as well
  2. Capersfits about as well
  3. Parsleythe original
  4. Nutmegfits less well

Fit is the average pairing score against lobster, egg, sauce, pepper. Candidates are from the same food group and used in at least 100 recipes.
