Lobsters, to Dress

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Take the lobster out of the tin and cut the flesh into small dice.

  3. Make a white sauce as directed, then add the anchovy essence, salt, and cayenne.

  4. Place the prepared lobster in well-buttered scallop shells.

  5. Cover the lobster lightly with the sauce and add a thin layer of breadcrumbs.

  6. Sprinkle with melted butter and bake for about 20 minutes until lightly browned.

  7. Serve immediately.
