Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and add richness as they set with heat.
Cornflour
Thickens the milk into a smooth custard when boiled.
Butter
Adds fat for a smooth, rich mouthfeel.
Loaf sugar
Sweetens the custard and balances the coffee flavour.
Milk
Forms the liquid base that the custard thickens into.

The step that matters

Stir in the egg yolks and keep stirring until the mixture thickens. Egg yolks can curdle or scramble if they overheat in hot liquid. Constant stirring spreads the heat evenly, so the proteins thicken the custard smoothly instead of clumping.
