Ox-liver, Roasted

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash and dry the liver.

  2. Place the liver in a deep baking dish and surround it with hot water to half its depth.

  3. Cover the liver with slices of bacon.

Bake and serve

  1. Bake gently at 350°F (175°C) for 1½ hours, basting frequently.

  2. Dredge the liver with seasoned flour (salt and pepper) during baking.

  3. If desired, cut the bacon into dice.

  4. Serve as a garnish, keeping it covered with greased paper while cooking to prevent it from becoming too crisp.

What each ingredient does

Liver
Forms the main body of the dish, cooking through gently to stay tender.
Fat bacon
Adds fat that bastes the liver and flavours it as it renders.
Flour
Dredging coats the surface, helping it brown and forming a light crust.

The step that matters

Baking gently with frequent basting. Liver is lean and turns dry and tough when overcooked or cooked too hot. Gentle heat with basting keeps moisture in the meat while it cooks through.
