What each ingredient does

Plums
Provide the fruit, pectin and acid that give the jam its body and flavour.
Sugar
Draws moisture out of the fruit and helps the jam thicken and keep well.

The step that matters

Boil gently until the jam sets. Boiling too hard or too long can scorch the sugar and dull the fruit flavour, while stopping too early leaves the jam runny. The cold plate test shows when enough pectin and sugar have concentrated to set.
