What each ingredient does

Eggs
Bind the batter and add structure as the pudding sets.
Flour
Provides the starch that gives the pudding its body.
Suet
Adds richness and fat that keeps the pudding moist.
Moist sugar
Adds sweetness and moisture, and helps deepen the flavour.
Breadcrumbs
Soak up liquid and help give the pudding a tender crumb.

The step that matters

Add the eggs one at a time, mixing well after each addition. Adding eggs gradually lets each one emulsify fully into the batter, so the mixture stays smooth and does not separate or curdle.
