Pork, to Cure

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Press some of the meat firmly into the bottom of the pie to support it.

  2. Moisten the meat with the prepared seasoned gravy before adding the lid.

  3. Bake the pie in a 350°F (175°C) oven for at least 2 hours.

  4. Brush the pie with the yolk of the egg when it is about halfway baked.

  5. Add slices of hard-boiled egg with the meat if desired.
