Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potato

  1. Bake potatoes in skins until 1 lb of potato.

  2. Mash smoothly or pass through a sieve.

Make the dough

  1. Rub lard and dripping into flour.

  2. Add potato, baking powder, and salt.

  3. Stir in egg and enough milk to form a smooth paste.

  4. Roll dough to about 1 inch thick.

  5. Cut into rounds or squares.

Bake and serve

  1. Place in greased tin.

  2. Bake at 350°F (175°C).

  3. Turn 2 or 3 times until both sides browned.

  4. Split.

  5. Butter liberally.

  6. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Floury potato
Provides starch and softness, giving the paste a tender, crumbly body.
Flour
Forms the main structure of the dough once moistened and rolled.
Lard and dripping
Fat that shortens the dough, keeping it tender and rich while browning.
Egg
Binds the dough together and adds richness and structure.
Baking powder
Releases gas during baking so the cakes rise and lighten.

The step that matters

Turn 2 or 3 times until both sides browned. Cooking on a greased tin needs even heat and timely turning; flipping too rarely scorches one side while the other stays pale and underbaked.

Swap the potato

How well each one fits the dish's main ingredients (flour, egg, milk):

  1. Arrowrootfits better
  2. Asparagusfits about as well
  3. Chivefits about as well
  4. Potatothe original

Fit is the average pairing score against flour, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
