Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Break the eggs into a bowl and beat well with the sugar and essence of lemon for 15 minutes.

  2. Gradually sift in the flour and mix lightly.

  3. Transfer the mixture to a piping bag and pipe onto a sheet of thick parchment paper.

Bake

  1. Bake in a hot oven at 400°F (200°C) for 10 to 12 minutes, watching carefully to avoid burning.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped with sugar to trap air, giving the biscuits their light structure as they set.
Sugar
Sweetens the biscuits and helps stabilise the beaten egg foam.
All-purpose flour
Sets during baking to give the biscuits their final structure and body.

The step that matters

Gradually sift in the flour and mix lightly. The flour must be folded in gently. Vigorous mixing knocks air out of the beaten egg foam, so the biscuits bake up flat and dense instead of light.
