Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- French crushed tapioca
- Thickens the milk as it cooks, giving the cream its body and soft, spoonable texture.
- Egg yolks
- Enriches the cream and helps it thicken further, adding richness and a smooth set.
- Milk
- Forms the liquid base that the tapioca swells in and cooks into a creamy custard.
- Thick cream
- Whipped and folded in, it adds lightness and a richer, softer mouthfeel.
- Castor sugar
- Sweetens the cream and adds to its smooth, rounded flavour.
- Red-currant jelly
- Forms the sweet, fruity set layer that becomes the top of the unmolded dessert.
The step that matters
Cook the tapioca gently for the full time. Tapioca starch must swell and fully cook in simmering liquid to thicken evenly and lose its raw, grainy texture. Cooking too hard can scorch the milk or break the mixture, so keep it at a gentle heat.
