What each ingredient does

Sugar
Provides the sweetness and the glassy, brittle structure once the syrup cools and sets.
Cream of tartar
Adds acidity that helps keep the syrup smooth and discourages sugar crystallising.
Cochineal
Gives the toffee its red colour.
Raspberry essence
Adds the raspberry aroma and flavour.

The step that matters

Boiling to the 'large crack' stage. The syrup must reach the right concentration. Stopping early leaves a soft, sticky toffee that will not set firm, while boiling too long makes it dark, bitter and prone to burning. Skimming keeps impurities out so the toffee stays clear.

Swap the raspberry

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits about as well
  3. Raspberrythe original
  4. Raisinfits about as well

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
