What each ingredient does

Green walnuts
Provide the main texture and dark, bitter flavour that the pickle is built around.
Vinegar
Acts as the preserving liquid, softening and sharpening the walnuts while keeping them stable.
Coarse sea salt
Seasons the pickling liquid and helps draw out moisture from the walnuts.

The step that matters

Pouring the boiling vinegar over the walnuts. The vinegar must be hot enough to be poured over the walnuts without cooling below boiling, so the pickling liquid is fully prepared and infused with the spices before it is sealed in.
