Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down when boiled, thickening the soup and giving it body.
Milk
Adds richness and a smooth, creamy body to the soup.
Flour or cornflour
Starch that thickens the liquid when heated, giving the soup body.
Butter
Adds fat for richness and a rounded, mellow flavour.

The step that matters

Adding the flour mixture. Flour must be mixed smoothly with cold liquid first, then stirred into hot soup. Added dry or lumpy, the starch clumps and cannot thicken evenly.
