Yorkshire Ginger Cake
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
In a large bowl, mix flour and salt. Gradually add water to form a dough.
Knead the dough well until it is as dry as possible.
Cover the dough with a cloth and let it prove in a warm place for about 3 hours.
Knead the dough again with some flour, cover, and let it prove for another hour.
Turn the dough out onto a board, divide it into suitable-sized pieces, and shape into loaves.
Once nicely proved, bake in a moderate oven at 350°F (175°C) until golden.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
