Filets De Sole a LA Normande

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Clean, skin, and trim the soles, then remove the fillets and fold them in half.

  2. Place the fillets in a buttered sauté pan, season with pepper and salt, and moisten with white wine.

  3. Sprinkle the chopped shallot and add bits of butter on top.

  4. Cook in a 350°F (175°C) oven for about 10 minutes.

Garnish and serve

  1. Prepare a garnish of oysters, mussels, and mushrooms.

  2. Place the fillets on a dish, dress with the garnish, and sauce with Normande sauce.

  3. Garnish the sides with croûtes made from buttered and browned French dinner rolls.

  4. Serve the remaining sauce separately.

What each ingredient does

Soles
Provide the delicate white fish fillets that form the base of the dish.
White wine
Moistens the fillets and creates steam, keeping the fish tender while it bakes.
Butter
Adds richness and carries flavor, helping the fish brown lightly and stay moist.
Shallot
Adds a mild, aromatic onion-like sweetness that deepens the sauce.
Oysters
Contribute a briny, savory flavor to the garnish.
Mussels
Contribute a briny, savory flavor to the garnish.

The step that matters

Baking the fillets. Fish proteins set quickly and turn dry and firm if overcooked. Baking only until opaque keeps the fillets moist and tender, so check them at the time given.
