Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt
Draws out moisture and preserves the meat during the cure.
Brown sugar
Balances the salt and adds sweetness to the cure.

The step that matters

Turning and rubbing the meat during the cure. Salt and sugar penetrate the meat slowly, so turning it and rubbing in the pickle over the full 8 to 9 days helps the cure reach evenly through the shoulder.

Swap the mace

How well each one fits the dish's main ingredients (sugar, clove, ginger, pepper):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against sugar, clove, ginger, pepper. Candidates are from the same food group and used in at least 100 recipes.
