Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Whip the egg whites until very stiff and season lightly.

  3. Spread the whipped egg whites evenly in a small buttered pie dish.

  4. Make holes in the egg whites to hold the yolks.

  5. Drop a little milk into each hole, then carefully slip in the yolks.

Bake and serve

  1. Bake until set, then sprinkle with chopped parsley and serve hot.

What each ingredient does

Eggs
Whites whip into a stiff foam that holds the dish together, while the yolks set into soft centers.
Milk
Adds a little moisture to each yolk well, keeping the yolks tender as they cook.

The step that matters

Whipping the egg whites until very stiff. Whites must be beaten to a firm foam so they trap air and hold their shape in the oven. Under-whipped whites collapse and spread, leaving the dish runny and flat.

Swap the parsley

How well each one fits the dish's main ingredients (egg, butter, milk):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Parsleythe original
  4. Tarragonfits less well

Fit is the average pairing score against egg, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
