Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. In a bowl, mix mashed potatoes, chopped ham, parsley, and beaten eggs, saving the white of one egg.

  2. Season the mixture with salt and pepper to taste.

  3. Form the mixture into small balls.

Coat and cook

  1. Brush the balls with the reserved egg white and roll them in flour.

  2. Bake in a 400°F (200°C) oven until golden brown, or fry in deep fat until cooked through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Provide the bulk and soft, tender interior of the balls.
Eggs
Bind the mixture together and, as egg white, help the flour coating adhere.
Chopped ham
Adds savory flavor and salty, meaty taste throughout the balls.
Flour
Forms a dry outer coating that helps the surface brown when baked or fried.

The step that matters

Sealing the coating before cooking. The egg white and flour coating must cover the balls fully. Gaps let moisture escape and the filling can burst or dry out during baking or frying.

Swap the potato

How well each one fits the dish's main ingredients (ham, parsley, egg, butter, pepper, flour):

  1. Shallotfits better
  2. Chivefits better
  3. Leekfits about as well
  4. Potatothe original

Fit is the average pairing score against ham, parsley, egg, butter, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
