Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the apples

  1. Peel the apples.

  2. Core the apples.

  3. Stew the apples with a little syrup made from the peels and cores.

  4. Pulp the apples.

Make the filling

  1. Add butter and lemon flavoring to the pulp.

  2. Beat the egg yolks.

  3. Mix the beaten yolks with the apple pulp.

  4. Place the mixture in a pie dish lined with pastry.

Bake and top

  1. Bake at 400°F (200°C) until the pastry is done.

  2. Whip the egg whites until stiff.

  3. Add sugar and flavoring to the whipped whites.

  4. Pile the mixture on top of the pudding.

  5. Return the pudding to the oven to set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the main body and moisture of the pudding as they stew and break down into pulp.
Eggs
Yolks enrich and thicken the apple pulp, while whipped whites lighten the topping.
Butter
Adds fat for richness and a smoother, more tender texture.
Sugar
Adds sweetness and helps the whipped egg whites hold their stiff structure.
Lemon
Adds acidity and bright aroma that balance the sweetness of the apples.

The step that matters

Return the pudding to the oven to set. Whipped egg white topping sets quickly with gentle heat. Too long in the oven can overcook it, causing it to weep, toughen, or over-brown, while too short leaves it soft.

Swap the apple

How well each one fits the dish's main ingredients (egg, butter, lemon, sugar):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Applethe original

Fit is the average pairing score against egg, butter, lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
