Ingredients

Directions

Make the peach base

  1. Poach the peaches, remove the pulp, and rub it through a sieve.

  2. Add sugar to taste, along with the grated rind and lemon juice to the pulp.

Combine and set

  1. Gradually mix in the whipped cream.

  2. Dissolve the gelatine in the milk or water and let it cool, then stir it into the mixture.

  3. Continue stirring until it begins to set, then add the sliced peaches.

  4. Pour the mixture into a wet mold and set it in a cool place to firm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the cream mixture into a firm, sliceable structure as it cools.
Cream
Adds richness and a light, airy texture when whipped and folded in.
Peaches
Provide the main fruit flavour and body through the pulp.
Lemon juice
Adds acidity that brightens the sweetness of the peaches and cream.

The step that matters

Adding the gelatine mixture. Gelatine must be fully dissolved and cooled slightly before it is stirred into the cream. If it is too hot it can melt the whipped cream, and if it is added too cold or in lumps it sets unevenly and leaves a rubbery texture.

Swap the lemon

How well each one fits the dish's main ingredients (milk, cream, peach, sugar):
