What each ingredient does

Cream
Whipped into soft peaks, it traps air and gives the dessert a light, airy texture.
Apricots
Pulp gives the cream its fruity flavour, pale colour and natural tartness.
Isinglass
A gelatine-like setting agent that firms the cream as it cools, so it holds its shape.
Powdered sugar
Adds sweetness and dissolves easily into the cold cream and fruit pulp.

The step that matters

Dissolving the isinglass. Isinglass must be fully dissolved in hot water before mixing. Undissolved pieces set as lumps, and the mixture must be stirred well so the setting agent spreads evenly through the cream.

Swap the apricot

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
