Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Macaroons or sponge cakes
Soak up the sherry or syrup and form the soft base under the cream.
Cream
Provides richness and the body of the set custard-like layer.
Arrowroot
Thickens the cream as it boils, giving a smooth, sliceable set.
Sherry
Adds aroma and flavor to the soaked cakes.
Lemon
Adds aromatic citrus flavor from the rind and acidity from the juice.

The step that matters

Boiling the arrowroot mixture. Arrowroot thickens only when it boils, so it must be stirred well and kept at a gentle boil for the stated time. Stirring prevents lumps and scorching on the base of the pan.

Swap the angelica

How well each one fits the dish's main ingredients (cream, sugar, sherry, arrowroot, lemon, milk):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Angelicathe original
  4. Thymefits about as well

Fit is the average pairing score against cream, sugar, sherry, arrowroot, lemon, milk. Candidates are from the same food group and used in at least 100 recipes.
