Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Apple Jelly

Ingredients

Directions

Prepare the fruit

  1. Wash and cut the apples without peeling or coring.

  2. Place the apples in a preserving pan and add enough cold water to barely cover them.

  3. Add the lemons and bruised ginger, then boil until the apples are quite soft.

Make the jelly

  1. Strain the mixture well, then add 1 heaped cup of sugar for each cup of juice.

  2. Boil gently for 7 to 15 minutes after it comes to a boil, testing for jelliness on a plate.

  3. Skim off any foam and strain using a jelly bag or folds of butter cloth.

Ginger and sugar barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green apples
Provide natural pectin and acid that help the juice set into a jelly.
Sugar
Sweetens the jelly and helps it set by binding water and firming the pectin network.
Lemons
Add acidity that supports pectin setting and brightens the flavour.

The step that matters

Boil gently and test for jelliness. Boiling too long or too hard can break down pectin and darken the flavour, while stopping too early leaves the jelly runny. Testing on a cold plate shows when enough pectin and sugar have concentrated to set.

Swap the apple

How well each one fits the dish's main ingredients (lemon, ginger, sugar):

  1. Orangefits better
  2. Limefits better
  3. Mangofits better
  4. Applethe original

Fit is the average pairing score against lemon, ginger, sugar. Candidates are from the same food group and used in at least 100 recipes.
